Roaster’s Report - Colombia Finca Betulia Honey

Anaerobic Natural Geisha from Guatalon Farm

Source: Genuine Origin

Country: Colombia

Growing region: Huila

Elevation: 1550 masl.

Coffee varietal: Honey Process

Processing: Quality and variety are strong themes at Villa Betulia, and this double-fermentation honey-processed green coffee is an ode to both. First, ripe cherries were floated to remove any defects and fermented anaerobically for 50 hours. Then the coffee was depulped and fermented for another 50 hours in closed plastic containers with a proprietary blend of spices to help fuel the process. After the double fermentation, the beans were dried in the sun for 10 days with close attention paid to controlling Brix degrees, temperature, and pH.

Cupping Score: 90

Coffee description: Finca Betulia is operated by Luis Calderon and his son Yeison. They produce exceptional coffees, and we are very excited to showcase this honey processed lot. It features an intense, lively sweetness like fig jam, bright floral and sweet spiced aromatics, and a delightfully lingering finish - the cup is a testament to the work put into these coffees during growing, picking, and processing.

We taste notes of fig jam, honeysuckle, sweet orange.

Green coffee transparency: 130lbs @ $11.50/lb, December 2023 (Commodity coffee price: $1.91lb. Why is this important? Coffee pricing is complex and multifaceted, and sharing what we paid is an incomplete picture, but we believe in sharing the data we have available, hoping that will embolden others to do the same, with the ultimate goal of getting producers fairer pay for their excellent work.)

Length of Relationship: Genuine Origin, since 2017.
